This wine is layered with blackberry, plum, dark chocolate, coffee, and toasty oak flavors. A silky weight with great finesse are the trademarks of this Red Mountain Cabernet Sauvignon. Pair this wine with pepper steak, prime rib, roast lamb, or dark chocolates.
VINTAGE AND VINEYARDS
One of the hottest growing seasons on record, 2014 was an exceptional year for red grapes. The warm, dry conditions extended late into October, allowing the grapes to develop the full, ripe fruit flavors and aromas, and soft, supple tannins associated with excellent quality wines. The grapes for this wine were harvested exclusively from the Red Mountain, an area known for growing the great Cabernet Sauvignon. Due to the incredible vintage year, this Red Mountain Cabernet Sauvignon has amazing color and depth, with silky tannins and vibrant fruit. This is a wine that can be cellared for some time, as it only gets better with proper aging.
The grapes were hand picked during the day to take advantage of the sun’s heat for warm, effective macerations. The grapes were destemmed, crushed, and fermented in small bins. The wine rested for 21 months in a mixture of old and new French oak barrels before being bottled in September 2016.
